This watermelon fresca recipe is super sweet darlings, not only because it’s the most delicious watermelon juice ever BUT because it is brought to you by my oldest daughter May!!  Prepping Watermelon Juice

Growing up I spent a lot of time with my Abuela, and she is the only person I know who can whip up an entire meal in under 20 minutes. To this day I don’t understand how, I have tried to observe and watch the magic but it always happens so fast. That was her way with juicing too. One moment there was a big bag of lemons or 4 mangoes and the next was a gorgeous liquid ready to be consumed.

While I may not have figured out her trick to instant food, I have cracked her instant juice. She always always uses whatever she has on hand. A splash of water or maybe some salt, and always “one spoon” of sugar. As an adult I see what she considers one spoon, and while a tablespoon and serving spoon are anything but equivalent it is probably the reason I was so addicted to all her juices. Now I am able to take her tradition she instilled in me and almost instantaneously create delicious drinks from what seems out of thin air all summer long, with really only one single ingredient. And this time with a real tablespoon 🙂

Watermelon Fresca Recipe

WHAT YOU’LL NEED:

  • Blender

INGREDIENTS:

  • Approximately 8 cups Cubed Watermelon
  • 8-10 Fresh Mint Leaves
  • 1 TBSP Sugar
  • 1 Cup Ice

Watermelon and mintTO MAKE: 4 Servings

  1. Add watermelon to the blender leaving enough space to be able to put the lid on.  If you have a smaller blender you can half the recipe and make in batches.
  2. Add mint & sugar.
  3. Blend on medium setting, you may need to push the watermelon down a bit to get it going.Blending Watermelon Juice
  4. Once watermelon begins breaking down, while blending add ice via the top hole until chunks liquefy.
  5. Pour and enjoy!! Juice Storage

No worries if you don’t drink it all…we like to keep leftover juice stored in the fridge because it’s even more refreshing the next day when it’s super cold!!
